# Why are my temperatures off? Testing accuracy

Before assuming your Stick is inaccurate, it helps to know that meat and cooking environments are uneven by nature — so a reading that looks "off" is often correct.

## Internal temperature

Different parts of the same cut sit at different temperatures while cooking. A large roast or turkey can vary by 15–25 °F across the meat, and even a steak or chicken breast can differ by several degrees depending on how the Stick is inserted.

For the most accurate reading, insert the Stick into the **thickest part** of the meat from the side, avoiding bone and cartilage.

## Ambient temperature

The ambient reading measures the air right around the meat, which is usually cooler than what your grill or oven dial shows. Placement matters too — directly above the meat reads lower than out to the side over the heat source. The Stick shows the *actual* temperature where your food is cooking, which is what you want.

Most grills, ovens, and smokers also have cold spots that can run 50–75 °F below the set temperature.

## Testing accuracy: the ice-water bath

The simplest way to check any thermometer is a properly made ice bath. Done carefully it holds 32 °F (±3 °F); done carelessly it can read several degrees high — a cup of ice water alone can sit 24 °F too warm.

> **Signal tip:** while testing, your hand or the water can block the Stick's signal, so a temperature change may not show right away and the reading can look stuck. Keep your phone right next to the Stick — or set a Smart Base, WiFi Hub, Xtender, or WiFi Bridge beside it, since those pick up the signal better than a phone. If it gets close but not quite to temperature, the signal was likely lost: lift the Stick out for a few seconds (you'll see the temp jump), then try again. This only happens during the test — normal cooking doesn't block the antenna this way.

1. **Fill with ice.** Pack a vessel to the top with ice — crushed is best, but cubed works fine.
2. **Add water.** Slowly fill the gaps to about ½" below the top of the ice. Let it settle a minute or two. If the ice floats up off the bottom, pour off some water and add more ice (water below the ice won't be at 32 °F).
3. **Insert the Stick.** Create a cook in the app, then stir the Stick through the vertical center of the slurry — don't let it rest against an ice cube, the side, or the bottom of the vessel.
4. **Read it.** Your Stick should show 32 °F (±3 °F). A reading around 35–36 °F usually means the ice bath wasn't quite right.

> **Skip the boiling-water test.** It puts excess strain on the Stick's battery and can damage the Stick if its maximum temperature is exceeded.
